"My ideal Passe-tout-grain--Pierre Henri's Piquette is a harmonious, contemplative blend of Pinot Noir and Gamay in perfect proportion. While the Pinot Noir brings complexity and texture, a healthy dallop of gamay contributes freshness, high tones, and ultimate crushability. Wild strawberries, fresh herbs, tart cherry, crushed stone, sous bois, tree bark, black tea and a dusting of black truffle. I drank a bottle at home the other night and it's worth noting: this benefits from a generous decant, if you have time (1-2 hours)--and I was delighted to find it drinking even better on night #2 (Pure. Autumnal. Bliss.). This bodes well for it's trajectory for the next 2-5 years and should reward handsome dividends to the patient drinker with even just short to intermediate cellaring."
