"This South African gem comes from Simonsberg-Paarl -- a mountainous region, contiguous with Stellenbosch and nestled just 28 miles North of Cape Town. Noble Hill is a conscientious producer specializing in Sauvignon Blanc and Cabernet. This, however, is an experimental bottling made from the Mourvedre grape variety, which is probably most famous for its appearance in the French appellation of Bandol where it makes rich, layered roses and age-worthy reds with incredible depth. This is a little different though -- winemaker Kristopher Tillery ferments this wine using carbonic maceration (as intact, whole clusters) and bottles it fresh for a style that lands somewhere between natural-ish Cru Beaujolais and youthful Bandol rouge. Fresh black berries, wild strawberries, crunchy herbs, and a thirst-quenching minerality make this wine hard not to love. Stick it in the fridge for 40 minutes prior to devouring. Partner with roasted meats, BBQ and foraged root veggies. This vineyard is in conversion to organic. 125 cases made."
