"Kobal Furmint is a dry white wine produced in the Haloze Hills, in Lower Styria, Slovenia. Although Furmint is most famous for its Hungarian origins (where it plays a key role in the local desert wine-Tokaji), it makes a stable and historic outpost in Slovenia--and this version is a great example of what this grape variety is capable of when vinified dry. The vineyard is tended organically and dry-farmed (without irrigation). In the winery--vinification takes place entirely in stainless steel--incorporating skin contact for 24 hours prior to fermentation which takes place partially with cultured/inoculated yeast and partially without (relying on a wild/indigenous ferment). The finished wine is remarkably textured--offering generous layers of ripe pear, granny smith, fresh cream, flowers, bee's wax, and sea salt. Its pillowy texture equips it well to pair with richer Autumnal fare including pasta with creamy/pumpkin sauces, root veggies, and butternut squash soup. Just over 800 cases produced."
