"Sourced from the DOC of Ribera del Duero--Los Cantos is produced from 95% Tempranillo and 5% Merlot--all certified organic and biodynamic fruit. Los Cantos refers to the round river stones that can be seen in the 5 different parcels of vineyard from which it is sourced. After fermentation, the wine sleeps for 18 months in mostly neutral French oak barrels. On the palate, rustic red fruit and dry dusty earth harmonize: raspberries, sous bois, crushed leaves, black tea, and truffles. There is some really satisfying tannin here, and the finish is long. I’d drink this any night of the week--especially with a good burger of veggie burger, roasted vegetables, grilled mushroom etc. But I also think it will continue to improve with another 1-3 years of age especially."
