"A happy blend of Chenin and Chardonnay sourced from the AOC of Fiefs Vendeens--an off-the-beaten path territory of the Loire in the outskirts of the Nantes, the home of Muscadet. Although Domaine de la Barbiniere also produces Muscadet, the Silex offers a different lens into a similar terroir. The soil here is a unique mix of grey and red schist, argilo-calcaire, gneiss, orthogneiss and amphiboles. It is fermented using spontaneous fermentation and aged 4 months in stainless steel on its fine lees. The resulting wine offers remarkable complexity: green apples, key lime, cream, crushed seashells, white mushrooms, fresh herbs and subtle wafts of wet matchstick and tea. Pair it with a range of pescatarian delights from cod and trout to grilled lobster, and littlenecks."
