This is Pet Nat.

What the heck is Pet Nat?

Pet Nat = Petillant Naturel

Pet Nat is the most important food group you might likely be missing in your wine diet.

That’s basically the French way of saying sparkling wine made in the most natural way possible.

This is one of my favorite categories of wine—and it’s probably something you need in your life. 

As opposed to Champagne, Pet Nat uses just a single natural fermentation (Champagne uses two fermentations) to produce sparkling wine. 

The result is a wine that’s marked by a more subtle sparkle, a slightly softer texture than Champagne, less yeastiness, a little more purity, and almost always a distinct mineral signature. 

This particular Pet Nat is, debatably, the best kind of Pet Nat. Rosé Pet Nat. 

Domaine de Cannailes is a small project spearheaded by two buddies: Simon Pêrot and Entienne Ubaud. 

Simone and Entienne met while studying wine in Gaillac.

This is their third vintage making wine together, and quite simply, the wines are amazing. 

This vineyard, which is planted on granitic substrate, has been farmed organically since 2005 and the guys have been practicing Biodynamic since their first vintage. 

This delicate sparkling wine is vinified from 50-year-old Gamay vines in the region of Beaujolais. 

The finished wine is bottled unfiltered--this helps to keep all the flavor--and finished with as little Sulphur as possible.

My Notes Read: There isn't a whole lot of Beaujolais producer-made pet nat out there, though whenever I cross paths with this niche category, the success rate is incredibly high. Quite simply, this is one of the prettiest I've tasted. Cotton candy, baking spice, fresh herbs, wild strawberry, and petrichor for days. Though be advised, this is an extremely limited run. If ya love it, buy in now. 12.5%

On Thursday, May 16th, Natalie and Ryan, winemakers and owners of Outward Wines are going to be visiting The Annex for a comprehensive tasting seminar. 

Outward Wines is based in San Luis Obispo and celebrates special vineyard sites along the central coast. All of their sites are farmed using Organic and/or Biodynamic viticulture. 

These wines are super limited by virtue of the fact that in most cases just a few or a small handful of barrels are made.
